Tasha Elizarde, KTOO’s Community Reporting Fellow, sits down with three Juneau’s best-known chefs: Rachel Carrillo Barril (“In Bocca Al Lupo”) and Aims Villanueva (“Black Moon Koven”) to discuss how their Filipino identities influence the way they cook. Discussion includes a discussion about the term “fusion food”, which is a blend of Alaskan ingredients and Filipino techniques. Also, the discussions include a critique on the notion of “fusion food”, as well as the battles Filipinos wage through their Adobo recipes.
